What Is Pyeongyang Naengmyeon?

Pyeongyang Naengmyeon (평양냉면) is a traditional dish from Pyeongyang, North Korea, made by topping buckwheat noodles with various garnishes and pouring chilled meat broth and dongchimi (radish water kimchi) broth over them. In the past, pheasant broth was used, but nowadays, broth made from beef and other meats is used. It was designated as a UNESCO Intangible Cultural Heritage of Humanity on November, 2022. It is known to have first developed during the Goryeo dynasty and evolved differently in North Korea and South Korea after the Korean War and subsequent division of the peninsula. In Pyeongyang Naengmyeon restaurants in Seoul, run by displaced people from Pyeongan Province after the division, beef broth and ox bone broth are often used. The broth is seasoned with salt instead of soy sauce, resulting in a clear broth. Toppings typically include slices of meat, boiled eggs or fish roe, radish kimchi, cucumber, scallions, and pear.
