Mak-guksu is a Korean noodle dish, particularly developed in the Gangwon and eastern Gyeonggi regions. It consists of boiled buckwheat noodles topped with a seasoning sauce, finely chopped kimchi, julienned cucumber, and boiled egg. The noodles are boiled, rinsed in cold water, and served in a broth made from kimchi juice or meat stock. Mak-guksu is similar to cold noodles (naengmyeon), but it often includes a mix of meat stock. The kimchi juice used is typically from dongchimi (radish water kimchi), baechu kimchi (napa cabbage kimchi), or nabak kimchi (radish and cabbage kimchi).
