While the temperature of the refrigerator compartment in a regular refrigerator is between 2 and 5 degrees Celsius, a kimchi refrigerator maintains a colder temperature of around 1 degree Celsius. This is because kimchi contains a lot of salt, so it won’t freeze at temperatures below 1 to 2 degrees Celsius, and it’s important to keep it at this temperature to maintain its flavor.
It was originally used for storing kimchi because it was optimized for storing it. However, it is now used as a secondary refrigerator. Many people use them to age meat. They’re also used to age sashimi and defrost frozen meats and fish with minimal damage. People also store alcohol and beverages in their kimchi fridge.
